Homemade Peanut Butter Chocolate Chip Granola Bars



In an earlier post, I mentioned that we have been experimenting with homemade granola bars.  I recently came up with a new recipe that was a real hit.  These peanut butter chocolate chip granola bars are sweet and slightly chewy, with just a little bit of crunch.  I think this recipe is a keeper.

Peanut Butter Chocolate Chip Granola Bars

Ingredients:
1/4 cup butter, softened
1/4 cup peanut butter
2 cups quick cooking oats
1 cup crisp rice cereal
1/4 cup unsweetened shredded coconut
1/4 cup toasted wheat germ
1/2 cup mini chocolate chips
1/4 cup brown sugar
1/2 tsp. salt
1/2 cup agave nectar
1 tsp. vanilla

Method:
Combine the softened butter and peanut butter until well mixed.  Add all the remaining ingredients and stir until well combined. Press into a greased 9 x 13 pan and bake at 350 for 20 minutes. Cool completely and cut into bars.
