Slow Cooker Broccoli Cheese Soup



I love slow cooker recipes.  Late afternoons and evenings are always so crazy at our house, that it is nice to have dinner already prepared and waiting in the slow cooker for when it is time to eat.  This broccoli cheese soup is  a great one to throw together and get in your slow cooker in the early afternoon and then it just takes a few minutes to finish it up and get it on the table for dinner.

My family loves it with these easy breadsticks.

Slow Cooker Broccoli Cheese Soup

Ingredients:
1/4 cup butter
1 small onion, chopped
1/3 cup flour
3 cups chicken broth
1/2 tsp. salt
1/4 tsp. pepper
2 cups whole milk
1 1/2 - 2 cups shredded cheddar cheese ( I use sharp)
3 cups broccoli

Method:
In a small skillet melt butter.  Add onion and saute until soft.  Add 1/3 cup flour and cook for 1-2 minutes.  The mixture will look gummy.  Add the mixture to the slow cooker, then add chicken broth, salt, pepper, and milk.  Cover and cook on low for 3-4 hours.  Add shredded cheese and mix together.  Cover and leave in slow cooker while you prepare the broccoli.  Lightly steam the broccoli in the microwave or on the stovetop until just crisp tender.  Add to the soup and stir to combine.

If I have cream on hand, I add a little at the end for some extra richness, but it is not necessary.
