Perfect Homemade Pumpkin Muffins with Chocolate Chips
Now that it is September, I feel like I can officially post this delicious recipe. These Pumpkin chocolate chip muffins are so delicious, and they are slightly on the more decadent side of the muffin spectrum, so I think they are actually more like a cupcake, but I try not to think of that because I want to feel a little better about eating them.
Now, I am not one to go all pumpkin crazy every fall, but I do have a few recipes that are worth making, and they make an appearance at our house every year during pumpkin season. This recipe for pumpkin muffins with chocolate chips is definitely one of these recipes that makes the cut and these muffins are worth every calorie. Believe me!
My boys love these muffins and gobble them right up, but they love them even more if I bake them into mini loaves. If you bake them in loaf pans they will require more baking time than is given in the recipe. My mini loaf pans are pretty small, so I only add a couple of extra minutes, but you may have to adjust according to your mini loaf size if you decide to go that route.
These muffins are best if eaten within a day or two, but if you can't finish them that quickly they freeze beautifully and can be popped in the microwave for a few seconds for a delicious warm muffin at breakfast, or anytime you get the craving.
I enjoy these muffins best when they are warm with a slathering of real butter, but they are delicious just as they are at any temperature. If you like pumpkin and chocolate together, I think you will love these muffins.
Perfect Homemade Pumpkin Muffins with Chocolate Chips
Ingredients
- 2 eggs
- 1 cup sugar
- 1 cup canned pumpkin
- 3/4 cup oil
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 400 degrees. Prepare muffin tins by greasing bottoms of the tins, or lining the cups with paper liners. Cream together the eggs, sugar, and pumpkin. Whisk together all dry ingredients in a separate bowl. Stir the chocolate chips into the dry ingredients. Add dry ingredients to the pumpkin mixture and mix to combine. Fill prepared muffin tins to 3/4 full and bake for 16-20 minutes, or until done.
