Raisin Bran Muffins
I have been making this recipe for Raisin Bran Muffins since I was about 9 years old. They are one of the first muffin recipes I learned to make and they have stood the test of time. If you like muffins and you like Raisin Bran, I think you will like these.
They come together easily. Dry ingredients are sifted or whisked together.
Then the wet ingredients are whisked together and the raisin bran cereal is stirred in. This mixture sits for a few minutes to allow the cereal to soften a bit.
The wet ingredients are then added to the dry ingredients and the mixture is stirred together just until moistened. There may be a few bits or streaks of flour remaining. That is 100% ok. You don't want to overmix muffin batter.
Then scoop the batter into a prepared muffin pan. I used paper baking cups this time, because I hate washing out the muffin cups when I don't use them, but in the future I will just grease the bottoms of the muffin cups like I usually do. I found that these particular muffins like to stick to the baking cups, so I get a better result when I just grease the bottom of the muffin cups and then remove the muffins after baking by running a plastic knife around each muffin cup to loosen them for easy removal.
I only grease the bottom of the muffin cups because if the sides are greased, then the muffin batter can't climb the sides of the cups during baking, and you will get ridges around the outside of your muffins.
These raisin bran muffins are so good! And, bonus, they freeze beautifully, so if you can't eat them all within a day or two, simply put them in a freezer bag or container and freeze them to be pulled out and microwaved for a few seconds to warm them up for a quick breakfast or snack later.
