Peanut Butter Energy Balls

 


A month or two ago, on my Domestic Doings post, I mentioned that I had made a batch of my favorite Peanut Butter Energy Balls.  I promised to share the recipe soon, so I am here today to do just that.

I am not going to wax poetic, or go into great detail about this recipe.  I know there are tons of recipes for energy balls all over the internet, but this is the recipe that I have developed, and the one I like best.

Because I hate measuring peanut butter I developed this recipe to use half a jar of the Kirkland Organic Peanut Butter.  I started using the whole jar, but found it was too much for my Kitchenaid to handle, and I got bored having to roll so many of the energy balls at once.

I start out by mixing up the peanut butter in my KitchenAid, using this method.  Then I put half of the peanut butter back into the jar and store it in the fridge to be used later.  I add the rest of the ingredients to the remaining peanut butter in the KitchenAid and mix it all together.

If my mixture seems a little dry, I add a little more honey.  If it is too sticky, I add a little more peanut butter powder, until it is the consistency I like.


I use my 1 Tbsp. cookie scoop to portion out the mixture, and I then roll them into balls.


I put them on a parchment-lined tray and pop them in the freezer until frozen solid.


Once frozen, I put the peanut butter balls in a freezer safe container and store them in the freezer.  I remove two or three at a time and let them defrost a bit before eating.

My boys love enjoying these energy balls as a snack as well.  They are a family favorite for sure.
