Caramel Popcorn
This caramel popcorn is soft and gooey at first, but hardens as it sits, so it is best consumed within a couple of hours of making it.

Easy Caramel Popcorn
Ingredients:
10-12 cups popped popcorn
1/2 cup butter
3/4 cup brown sugar
1/4 cup granulated sugar
1/4 cup light corn syrup
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp vanilla
Method:
Pop popcorn and sift through it to remove any unpopped kernels. (We don't want any broken teeth.) Melt butter and then add brown sugar, granulated sugar, corn syrup and salt. Whisk together until smooth. Bring to a boil and cook, stirring constantly, for 3-4 minutes. Remove from heat and stir in baking soda. The mixture will bubble up and look marshmallowy. Then add vanilla and stir to combine. Pour over popcorn and and mix well.
*Note I usually get about 10 cups of popped corn from about 1/3 cup kernels.
