Parmesan Fettucine with Toasted Pine Nuts and Broccoli


This recipe for Parmesan Fettucine with Toasted Pine Nuts and Broccoli, paired with some simple grilled chicken, is a perfect summer meal.  

The recipe comes together quickly and every step is completed on the stovetop.  Simply toast up your pine nuts in a dry pan. (Be careful - they go from perfectly toasted to burned and unusable in seconds.)  Then infuse some olive oil with garlic. Cook up some fettucine, adding the broccoli right in with the pasta for the last two minutes of cooking time until just crisp crisp tender. Drain the pasta and broccoli, add the garlic and oil and some grated parmesan cheese, and toss together. Top with the toasted pine-nuts and you have yourself a beautiful and delicious pasta dish in practically no-time.
