The Easiest Frozen Lemonade Pie - No-Bake Summer Treats Series

 

Today I am sharing my recipe for the easiest (and yummiest) Frozen Lemonade Pie you have ever encountered.  In fact, it is so easy, that I'm not sure you can even call it a recipe, it is more of a method.

I got this recipe from one of my college roommates a million years ago, when she made it and shared a slice with me.  I couldn't believe how easy it was once she told me how to make it.

This recipe just takes 3 ingredients.  Yup!  Only three!  Vanilla ice cream, frozen lemonade concentrate, and a graham cracker crust.  

I like to make my own graham cracker crust.  A good graham cracker crust is one of my favorite things in the dessert world, so I always make one from scratch that will fit a 9-inch pie plate. 

That being said, I have also made this with store-bought graham cracker crusts and it is still insanely delicious and even easier.  I have found that when I use a crust from the store, I usually need two of them. Since they are quite a bit smaller, not all of the pie filling will fit in one crust, so I make two smaller pies - and honestly, there is nothing wrong with that.

When you make this pie, you will need to pre-make your crust, or have your store-bought crusts ready.  Then remove your ice cream and lemonade concentrate from the freezer and give them a little bit of time to soften.  The amount of time will vary, depending on how frozen they are when they come out of your freezer and how warm it is in your kitchen. So, be sure to keep an eye on them. Then simply mix your ice cream and lemonade together (I use my KitchenAid), pour the mixture into your graham cracker crust and stick it in the freezer for a few hours until frozen through.

I find it easiest to cut and serve this pie when I take the pie out of the freezer and let it soften a bit on the counter first.

This pie is perfect for summer.  It is cold, refreshing, easy, and so yummy!
