Chicken Dinner Crepes
When I was in college, one of my roommates went to a bridal shower where these delicious Chicken Dinner Crepes were served. She got the recipe and made it for the girls in our apartment. Needless to say, I loved this recipe and I still make it to this day.
Granted, this dish is not the easiest to photograph in an appetizing way, but these tender crepes with a delicious chicken filling are mouthwateringly good.
They are easy to make. The crepe batter does need to be made ahead and refrigerated for at least an hour. And it you don't have any shredded chicken on hand, you will need to prepare some, but other than that, this recipe comes together in a snap.
I love these just as they are, but my husband and a couple of my boys prefer to eat the chicken filling over a bed of rice, and save the crepes for dessert. Not a bad idea at all if that appeals to you. But I highly recommend trying the flavorful filling inside a crepe first. It really is a great combination in a lot of ways.
Just put some filling in the middle of the crepe and wrap it up burrito style. You can put a little bit more filling over the top to make it more visually appealing if you like.
Some of my family also prefers the filling without the mandarin oranges, so I always leave those out, and then the people who want the oranges can just add them to the filling when they are loading up their crepes. To me, they are an essential component, so definitely try them with the mandarin oranges, unless you really dislike them.
If you have never made crepes before don't be afraid it is really not difficult, and there are lots of tutorials that can be found online about how to cook them. My biggest tip is to use a non-stick pan. Even though I cook pretty much exclusively in cast iron or stainless steel, I have only had good luck making crepes in a non-stick pan. I bought one non-toxic non-stick pan, and I only ever use it to make crepes.
