Perfect No Bake Cookies

These are the no-bake cookies that I grew up on, and honestly, no other has ever compared to them in my opinion. These are chocolatey and chewy without ever getting grainy. I love them. To me, they are the perfect no-bake.

This recipe came from a neighborhood cookbook that my mom had from before I was even born.  It is an oldie, but a goodie that has definitely stood the test of time.

We have enjoyed these several times this summer. It is nice to make a cookie that doesn't require turning on the oven. Plus, we just keep these puppies right in the refrigerator, so they are always cold and perfect for a hot summer day.  In fact, my boys complain if they are actually at room temperature.  They prefer them cold. So, you might give that a try too and see what you think.

A few tips . . .

1. When boiling the sugar, butter, milk and cocoa make sure that all of the sugar is dissolved before turning off the heat, this should only take a minute or two, but it is the key to making sure your cookies aren't grainy.

2. Use unsweetened baking cocoa.  I use an organic cacao powder I get at Costco, but Hershey's baking cocoa, that is easily found at any grocery store, works perfectly.


3.  Make sure you use quick oats when making this recipe.  They are the only ones that will cook fast enough in the hot chocolate syrup to make these cookies work out as they should.

4.  If you don't like coconut - no worries. Just omit it and possibly add a bit more of the quick oats.  Just a bit more - don't substitute a whole cup.

5.  If you like your no bakes a bit on the chewier side reduce the amount of quick oats by just a bit.


6.  One of the perks of no bake cookies is they don't spread on the baking sheet. I can usually fit this entire recipe on one pan.  I like to line the pan with this precut-unbleached parchment paper that I buy off Amazon.  I am attaching an affiliate link for the paper because I love it and highly recommend it.
