Oatmeal Raspberry Revel Bars
This recipe for Oatmeal Raspberry Revel Bars is an oldie, but a goodie.
It was originally a recipe for date bars, (which are also delicious and I will share the recipe for them someday) but I didn't always have the patience to make the date jam. I love raspberry jam and always have it on hand, so I adapted the recipe to use it instead.
I always use homemade raspberry freezer jam, therefore I get a nice bright red color, but you can also use raspberry jam that you purchase from the store. The color will just be darker and a little less vibrant.
In addition to being super tasty, these Raspberry Revel Bars are simple to make. Just mix up the dough, and press about 2/3 of it into the bottom of your 9x13 baking pan. Spread the jam on top of that, and then crumble the rest of the dough over all. Bake and then let them cool completely and cut them into bars.
And if I'm being honest, I think they are also delicious served warm with some vanilla ice cream and eaten with a fork. Mmmmm! So good!!
