Sausage Vegetable Soup

Our family loves soup on a cold day.  This sausage vegetable soup could not be easier, and is made from ingredients that I almost always have on hand, so it is perfect for a day that I may not have planned ahead very well.

Simply brown your sausage with some onions and garlic, then add the tomatoes, broth, and veggies and let it simmer away until it has reduced slightly and the vegetables are tender. 

I usually use home-canned tomatoes, if I have them.  If not, I just buy the best quality canned diced tomatoes that I can find.  I puree them before adding them because my family isn't big on tomato chunks in their soup.  If you like the chunks of tomato, just dump the diced tomatoes in as is and save yourself that step.

This soup is very versatile. You can use just about any vegetables that you like in a vegetable soup.  I always use carrots and celery, and then toss in whatever else I have on hand, that would go well in a soup, like diced bell pepper or chopped zucchini.

If you want to make this an Italian Sausage Vegetable Soup, simply add in Italian sausage instead of regular.  It will be delicious as well.

I like to serve this soup with some of my Fast and Easy Breadsticks.  Mmmmm.  So good!

This soup can also be made in the slow cooker.  Simply brown the sausage with onions and garlic, and then dump the rest of the ingredients in the slow cooker and let it cook away until done.  (Usually about 3 hours on high for my slow cooker)
