Flourless Peanut Butter Banana Blender Muffins

 

A couple of days ago, I made these delicious Flourless Peanut Butter Banana Blender Muffins. They have been a favorite of mine for a few years now.

In fact, I created a chocolate version based off of this recipe that I shared a couple of months ago. Those are sooo good too.

These little flourless peanut butter muffins are incredibly easy to make.  Just pop all of the ingredients in a blender and give them a whirl.  Then pour the batter into a lightly greased muffin pan, top with a sprinkling of mini chocolate chips and pop them in the oven for just a few short minutes.

When they first come out of the oven, they will look puffy, almost like a regular muffin made with wheat flour.

It only takes a minute or two for them to deflate and look like this.  Don't worry.  This is totally normal.  I promise, they still taste great.  Just don't expect them to have the exact same texture as a muffin made with flour.

I love that these muffins are made with no flour and they are only sweetened with banana and honey.  The mini chocolate chips I use to sprinkle on top, do contain some refined sugar, but you could use some chips that don't have sugar, or just skip them altogether.

These muffins also freeze beautifully.  If you can't eat them all in a day or two, put them in a freezer bag or container and freeze them.  A quick defrost and they will be just as good as they were when they were freshly made.

I must admit that I hate measuring out peanut butter and honey, so I always just eyeball those two ingredients.  I have been cooking and baking for a loooong time though, so I imagine I usually get pretty close on the measurements.  If you are nervous about getting the measurements right, then I recommend getting out the old measuring cups and using them.  If you are confident that you can eyeball the measurements and come pretty close, I think you will have success. Mine work out just the same every time regardless of whether I measure out the peanut butter and the honey or whether I make my best guess.
