Flourless Chocolate Peanut Butter Banana Blender Muffins

 

Today I am sharing a recipe for Flourless Chocolate Peanut Butter Banana Blender Muffins.  I know, that is quite a mouthful to say, but I couldn't think of a way to shorten the title, while still describing these good little muffins.

Most of the time, I try to watch the amount of wheat that I eat.  I can have some, but I have noticed that I feel better when I limit it or opt for sourdough.  (So thankful for sourdough - I have a lot of great natural yeast recipes that I will start sharing soon.)

These flourless muffins are a lifesaver when I want a little something sweet but don't want the wheat or the refined sugar.  They are sweetened with honey and banana and have no refined sugar other than the chocolate chips on the top - which I am sure you could sub out for something that didn't have refined sugar - or just go without them.

The ingredients for the muffin batter are all blended together in a blender and then poured into a pan.  Then a sprinkling of mini chocolate chips on the top finishes them off, before they go in the oven to bake.

When you first pull the muffins out of the oven, they will look puffy - just like a regular muffin.

But it will only take a minute or two for them to deflate and look like this.  That is totally normal!  Do not worry.  They still taste great, but as with any flourless muffin, the texture is different than that of a muffin made with wheat.  

**And just a little side note - - I love my new muffin pan.  It is a little pricey, but totally worth it in my opinion.  I was looking for a non-toxic muffin pan.  I am no expert, but as far as I can tell, this is a good one.  It is made from High Carbon Steel and is free from Teflon, PFOAS, PFOS, BPA, lead, cadmium and other toxic material.  I will leave an affiliate link for it after the recipe in case you are in the market for a new muffin pan.**
