Frozen Fruit Salad on a Stick - No-Bake Summer Treats Series
Today I am sharing a recipe that I learned to make a very long time ago - way back in junior high home ec class! I will start by saying if you don't like old-fashioned creamy fruit salad, then you will not like this recipe, and you might as well move on now, but if you do like old-fashioned creamy fruit salad, then you will be happy with this frozen fruit salad on a stick, because it has the exact same flavors.
When we first made this recipe in home economics class, I wasn't sure that I would like it, but when we returned the next day and tried these little frozen salad treats, I was pleasantly surprised. They were pretty darned tasty, and easy to make as well. I actually ended up making them several times at home over the following Summer.
These little frozen fruit salads come together easily, just whip up some cream and add greek yogurt, sugar, crushed pineapple, banana chunks, maraschino cherries, marshmallows, and some chopped pecans. Then spoon the mixture into small Dixie cups, insert a popsicle stick, cover lightly with plastic wrap and put in the freezer until frozen solid.
Now, to be totally honest, I did not add the nuts because I have a son who cannot have them. I also am not a big fan of maraschino cherries, but they add some nice color, and definitely add to the authentic old-fashioned fruit salad vibe of these treats. Still, I think they would be even better if you subbed out the cherries for strawberry chunks or raspberries. So, what I am saying is - - I think the nuts are optional, and the cherries are interchangeable with any other red fruit that you like.
Once the salads are frozen solid, and you are ready to eat one, just tear off the paper cup and enjoy!
