No-Bake Peanut Butter Bites - No-Bake Summer Treats Series

 


These delicious and easy Peanut Butter Bites are the second of my no-bake recipes I am sharing in my Summer No-Bake Treats Series.

While they are not healthy in any way, they are probably a smidge better for you, and definitely taste better than a peanut butter cup you would buy at the store.  As a bonus, they are super easy to make.

Creamy peanut butter is mixed together with butter, brown sugar, vanilla, and powdered sugar to make the peanut butter base.  It is pressed into a pan and then it is all topped with melted chocolate chips.  I always use milk chocolate chips, so these peanut butter bites are reminiscent of a classic peanut butter cup, but I am sure you could use semi-sweet or even white chocolate if that suits your fancy.

Once the chocolate has set up, cut in squares and serve.  These peanut butter squares are very sweet and rich, so I cut the squares small, about the size of a mini peanut butter cup.

I always line my pan with parchment so when it is time to cut, I can just lift it out of the pan and set it on a cutting board.  It is easier for me to cut nice straight lines this way.

These are cute little treats to take to a gathering.  I usually just take the perfect little center-cut pieces and then my family can enjoy the rougher edge pieces.  They don't mind that the edge pieces don't look as perfect, since they are still just as tasty.

In the summer, we always keep any leftover bites in the refrigerator.  That way the chocolate doesn't get too soft, and my family prefers them chilled.
