Scotcheroos - No-Bake Summer Treats Series

 

Today I am sharing a classic no-bake recipe.  Scotcheroos recipes abound on the internet, but I thought I couldn't possibly share a no-bake treats series on this blog without sharing the recipe for Scotcheroos that I have used and loved forever!

To me, Scotcheroos are classic treats to bring to a picnic, cookout, or barbecue. They are easy to make, easy to transport, and require no plates or utensils to eat them.  A perfect little dessert or treat when you are away from home.

These peanut-buttery cereal treat goodies are topped with a chocolate-butterscotch topping that is simply delicious.

The recipe calls for 6 ounces each of milk chocolate chips and butterscotch chips to make the topping.  If you can't find 6-ounce bags, and you don't have a scale, I have found that 6 ounces of chips generally comes to just under a cup when I have measured them.  And no, you do not have to be completely precise when measuring the chips for the topping.

Finally, these Scotcheroos are quick and easy to make.  The longest part of the whole process is waiting for the topping to set up enough to cut into them.

Just beware - once you've had one of these Scotcheroos it is hard to resist having another.  They are soooo good!


And for those who are concerned, here are my thoughts on corn syrup - 

Yes, this recipe for Scotcheroos does include corn syrup - not the greatest -  but it is important to understand that corn syrup is not the same thing as high fructose corn syrup.  I won't explain the difference because I am not a food scientist, but you can easily look it up.  I do, however, always try to buy organic corn syrup and use that if I can, because I don't like that corn used to make conventional corn syrup is a GMO crop. I try to avoid anything sprayed with glyphosate - even if it is going into an unhealthy treat.
