Easy, Flaky, Pie Crust Cookies


These Easy, Flaky, Pie Crust Cookies are just what they sound like.  They are cookies made from pie dough that has been brushed with egg wash or melted butter, and sprinkled with cinnamon sugar.  My mom always made them with any leftover pie dough scraps, and admittedly, that is usually the only time I make them.  However, not long ago, I was thinking about how much I really love pie crust cookies and made up a batch of my favorite All-Butter Pie Crust, rolled it out, cut little cookies out, and made a batch of pie crust cookies - - just because they sounded good. I am so glad I did, because my boys and I sure enjoyed them. 

When I make pie crust cookies from scraps, I don't re-roll the dough, because that can make it tough, and less flaky.  A light hand is always best when handling pie dough, so I just prepare them and bake them up, just as they are.  

When you are preparing your pie crust cookies you can brush them with egg wash, or melted butter.  Either way will result in delicious cookies, but I prefer them brushed with a little butter before sprinkling some of your favorite cinnamon sugar on top.

When baking your pie crust cookies, remember that all ovens bake a little differently, so towards the end of baking time, keep an eye on them.  These cookies can go from perfectly golden to burned faster than you think.

Look at how flaky these cookies are!! Perfect!  I am telling you, as long as you don't overwork the dough, this recipe is positively foolproof!
