Panko Crusted Salmon with Fruit Salsa


I am sharing my absolute favorite way to prepare salmon today.    I have been making this panko-crusted salmon with fruit salsa ever since my oldest boys were tiny.  The first time I made it, I decided I would just make the salmon for my husband and me, and feed the boys fish sticks.  I figured they wouldn't notice the difference and would probably want the fish sticks anyway.  Wow, was I wrong! As soon as they saw our salmon, they wanted nothing to do with their lame-o fish sticks and insisted on having some of our salmon.  From then on, whenever I made this recipe I had to make it for the whole family.  It is much loved and often requested for birthdays and other celebratory dinners.

The salmon is easy to prepare.  Just coat the top in the panko breadcrumb mixture, and place it crumb side down in an oven-safe skillet that has been heated with oil.  Once the top is nicely browned, flip it over and finish it off in the oven.

While a few of my boys prefer the salmon with just a squeeze of lemon, in my opinion, the salsa makes this dish.  It can be prepared with a lot of different fruits.  I have prepared it with fresh or canned pineapple, and I have also used fresh peaches, all were so delicious! I usually make the fruit salsa before I prepare the salmon, and then just let it hang out in the fridge until dinner is ready.
