Triple Chocolate M&M Cookies
I rarely make M&M cookies. I prefer semi-sweet chocolate in my cookies as a rule. And if I am making chocolate cookies like these, then I don't think they need chocolate chips, but every holiday season when I see the cute M&Ms in holiday colors come out, I just can't resist. Something about the bright colors of the M&M's against the dark chocolate cookie is just so appealing to me. Not only do they look cute and festive. These cookies are fudgy, and chewy, and just plain yummy.
I dressed these cookies up for Valentine's day, and I think they make the cutest little Valentine's treat, but they are just as good and just as cute dressed up with Easter m&m's, 4th of July, Christmas, etc.
What makes these cookies triple chocolate is the fact that the cookies themselves are chocolate, and then you add some chocolate chips and m&ms to the dough. Top the dough off with a few m&m's before baking (and a few as soon as they come out of the oven, if you want.) and you have about the cutest and most delicious triple chocolate chip cookies you ever saw.
I love that these cookies are made with cocoa powder. For someone who bakes as much as I do, it is shocking that I so rarely have baking chocolate in my pantry, but I am always good for some baking cocoa. I also love that these chocolate cookies do not need to be chilled before baking. Just scoop the batter onto your baking sheets and bake as soon as you have mixed everything up.
If you want the cookies to be even darker and richer, make these with a dutch process cocoa.
And, this is very important, do not overbake these cookies. They will lose their chewiness and become dry, If you are going to err on one side or the other, err on the side of underdone.
