Homemade Oatmeal Cream Pies

 

Oh my goodness!  These homemade Oatmeal Cream Pies!  In my opinion, they are the absolute best of any I have ever tried.  And since I love oatmeal cream pies, I have tried lots of them!  I think the reason that I prefer these to any others is that I use my homemade marshmallow fluff for the filling.  I think that it is more reminiscent of the cream filling in a store-bought oatmeal cream pie than the frostings that are usually in a homemade oatmeal cream pie, but so much better than the processed fillings in the manufactured varieties.


In addition, the cookie recipe is just perfect.  The cookies are soft and chewy and flavored just right, plus they are the perfect thickness for a sandwich cookie.

**With that said, different brands of flour, or different measuring methods will sometimes result in different results with cookies.  So, you may want to bake up one test cookie to see if you are happy with the results, or if the cookies need a little tweaking before baking up the whole batch.

These Oatmeal Cream Pies are definitely more labor-intensive than other cookies.  After all, you have to make up the homemade marshmallow fluff, and you have to make two cookies for each pie.  But, it is worth it!  Everyone who tries these oatmeal cream pies loves them!

Store these cookies tightly covered.  They will be best when freshly made but should be good for a few days.

I have never frozen them, so I don't know how well they would do if you want to make them ahead, or if by some off-chance you have enough leftovers that you can't eat them in a few days.
