Homemade Marshmallow Fluff

 

Have you ever made your own marshmallow fluff?  It is easier than you think, and so much better than what you can buy at the store.  

With only a few simple ingredients and kitchen tools, you can whip up (literally) the creamiest, fluffiest homemade marshmallow fluff you have ever had.

I love to use this fluff as a filling for homemade Oreos, whoopie pies, or oatmeal cream pies.  I also like to use it as a simple frosting.

**One note - you are making this with hot boiling sugar, so please use caution, especially if you have young children around.  

This recipe makes a big batch, so if you have any leftovers they can be safely stored, tightly covered, at room temperature for a day or two. Any longer, and I would put the leftover fluff in the freezer.  This marshmallow cream can be used after just a short time to thaw out once it is removed from the freezer, and is almost as good as it was on the day you made it.

You will need a candy thermometer to make marshmallow fluff.  To be honest, there are some old-fashioned manual ways that you can check to see if your sugar syrup is at the right temperature, but I am not comfortable giving instructions on that especially when a candy thermometer is inexpensive and so much easier.

Marshmallow fluff can be made with corn syrup or honey.  I have made it with both and they are both so good.  You will get a definite honey-flavored fluff if you make it with honey, but I love honey so that is not a problem for me.  If you want a more classic-flavored fluff, you will want to use corn syrup.
