Light and Fluffy, Quick and Easy Cinnamon Rolls

 


I love a good cinnamon roll, and believe me, I have tried many many many recipes, but I always come back to this one.  This recipe for light and fluffy, quick and easy cinnamon rolls is just that.  The cinnamon rolls are so easy and fast to make, and as long as you don't over-flour the dough, they turn out light and fluffy every time!

The thing that makes this recipe so fast is that it calls for 2 Tablespoons of yeast.  If you have a little more time, you could reduce that to about 1 Tablespoon and give it a little bit longer rising time - 45  minutes to an hour rather than just 15 or 20 minutes.  Either way, these cinnamon rolls are easy and delicious!

After the soft dough has been made and had its first rise, it is rolled out, brushed with butter and sprinkled with a brown sugar and cinnamon mixture, and then rolled up.  I cut it into sixteen cinnamon rolls. (I use dental floss to do this, as it has less tendency to squish the rolls when cutting.)  The rolls are placed on a parchment-lined sheet pan, and then rise a second time.

After the cinnamon rolls' second rise, they are baked to yummy golden brown perfection!

I mean, come on! Don't they look so good?!?

I never frost the entire pan, because my family has varying levels of desired frosting on their cinnamon rolls - from no frosting at all, to a nice thick covering.

In my opinion, nothing beats a warm, light, fluffy cinnamon roll slathered in delicious cream cheese frosting. Yum!

So, here is my all-time favorite recipe for light and fluffy cinnamon rolls that can be made in a flash.


I always line my pans with this pre-cut unbleached parchment paper.  It fits nicely on my half sheet pan baking sheets, and I don't worry as much about aluminum leaching into my baked goods. I love it.
